Roasted Red Potatoes!

I love potatoes!  I love how versatile they are.  Baked, fried, roasted, in soups, frittatas, side items...with breakfast, lunch or dinner.  Yum!

One of my absolute favorite ways to fix red potatoes is to roast them.  So easy.  So delicious.  And it makes the perfect side item for tons of different dishes.  Here's what you need for about 3-4 servings of roasted red potatoes:


4 medium to large red potatoes
1 tbsp extra virgin olive oil
Garlic powder
Onion powder
Dried oregano
Salt
Pepper

We got these beautiful red potatoes from our local co-op.  Local Roots Co-op is this amazing online farmer's market for the Farmville and Richmond areas.  If you are in one of these areas, I urge you to check it out.  There are dozens of local growers and producers that sell their items on the site, and you order like an online grocery store.  There is no minimum order amount and you can order from any or all of the producers.  You also don't have to order every week if you are out of town, etc.  They have everything from fruits and veggies, to meat and seafood, to homemade soaps, salves, breads and pretzels!  The only additional cost is a $50 annual membership fee that keeps the site up and running as well as the delivery (you choose a delivery site from their list of companies and organizations that serve as pick up locations).  However, if you help volunteer with the pick up sites, they waive that membership fee for you!  Okay, back to potato deliciousness.
 
Wash and dry your potatoes.
 
Chop them up!  I didn't grow up cooking, so I never learned knife skills.  Playing around with different ways of cutting up produce the last several years, I've found that this is the easiest way to get the right size wedges for this recipe.

Cut the potato in half, then make two cuts like this:
Then two more cuts in the opposite direction like this:

Culinary folks are probably cringing because this means not all the pieces are uniform, but it just leaves me with some roasted potatoes that are softer and some that are crispier, which it fine by me!  And it's the quickest way to cut them up that I've found, so please forgive my non-uniform chunks.  Now place your cut up potatoes in a bowl.

Add one tablespoon of olive oil and stir until all the potatoes are coated.  Add garlic powder, onion powder, oregano, salt and pepper to taste.  Remember, potatoes need quite a bit of salt.  Stir again to coat, then spread the potatoes out onto a baking sheet.
Bake for about 35 minutes on 400 degrees until roasted perfection!

Tonight we had these with black bean burgers on the grill (Spicy Black Bean Burgers) with cheese and avocado and they made a perfect pairing.  I also really like fixing these to go with omelets for breakfast instead of doing traditional hash browns.  So versatile...so easy!  Enjoy!!
